Easy Mushroom Soup

It is cold and wet and miserable outside.  We need soup!

Quick, easy, tasty, warm – here we go!

Here is what you need:

Mushrooms – I used the leftover Baby Bellas from the ginormous package I had

Onion – not much here

Fat of choice

Beef broth

Milk of choice

Finely chop the onion.  Add to large saucepan with part of fat of choice and sauté.  Slice your mushrooms while the onions are cooking.  When onions are soft, add a little more fat of choice and mushrooms.  Cook until mushrooms are soft.  Add beef broth and cook for about ten minutes.  Then add the milk of your choice and simmer for a few more minutes.  Garnish with a little cheese or croutons…or both.

Serve and enjoy!
