Bacon and Egg Cups

Still have company for the holidays?  This is a quick and easy breakfast that you can tailor to the number of guests that you have.

Here is what you need:

Eggs or egg substitute

Bacon (regular or turkey)

A muffin pan

Cut your bacon into four pieces and line the cups of the muffin pan with the bacon.  Crack one egg into each bacon lined muffin cup, or fill a little over halfway full with the egg substitute.  Bake at 375 for roughly 20 minutes.  If you like your eggs a little more done, as I do, you may need to leave them in a bit longer.

Scoop the bacon and egg cup out of the muffin pan.  This should be pretty easy because of the bacon.

Serve with fruit.  Enjoy!

You can also make these ahead of time and reheat them in the microwave.
