Turkey Cranberry Mini-Meatloaves

We had a few weeks of really nice spring weather, and then winter decided to make a comeback in the middle of April, for heaven’s sake.  So I decided to give cold weather food one last hurrah.  A little turkey with cranberries sounded good.

Here is what you need:

Ground turkey

A handful of almond flour (or wheat flour or breadcrumbs if you are not Paleo)

A handful of dried cranberries, or more, if you like

An egg (one per pound of ground turkey)

Mix all of the ingredients thoroughly.  Fill muffin cups about 2/3 full.  Bake at 400 degrees for 23-25 minutes. 

Serve and enjoy!

These also freeze well for grab and go meals.
