Breakfast is important, but that importance is the subject for another blog. This is the recipe for bacon and egg cups.
Here is what you need:
Eggs or egg substitute
Bacon (regular or turkey)
A muffin pan
Cut your bacon into four pieces and line the cups of the muffin pan with the bacon so that a little bit of the bacon comes over the edge of the. Crack one egg into each bacon lined muffin cup, or fill a little over halfway full with the egg substitute. Bake at 375 for roughly 20 minutes. If you like your eggs a little more done, as I do, you may need to leave them in a bit longer.
Scoop the bacon and egg cup out of the muffin pan. This should be pretty easy because of the bacon.
You can also make these ahead of time and reheat them in the microwave.
