It is still cold here, so stew sounds really good right now. And stew in the crock pot is even better.
Here is what you need:
Beef of your choice – stew meat, roast (I like chuck roast)
Low salt beef broth
Carrots (I use a bag of baby carrots)
Garlic (run through garlic press) or garlic powder
Peel and chop onion. I leave my pieces a little larger because that is how my family like them. Peel your potatoes and dice them – size again is up to you. Then add the beef, carrots, garlic, onions, and potatoes to the crock pot. Then add three to four cups of beef broth. Cover, set on high, and let cook for 8 hours.
Once the stew is done (meat cooked and potatoes and carrots are soft), you can slightly shred the roast. If you used stew meat, you can leave that as it is.
This freezes well.
